I ended up just doing a clean reinstall then transfer my server over. I disabled EFI boot and set /boot and /home to be /dev/sda and installed grub to it's MBR. This way my system functions consistently and if I have an issue it's just a matter of moving /boot to a new drive, installing grub to that, and setting that as the boot drive in the bios. I'm getting annoyed at EFI as there's like a decade of computers where it's a royal pain for various issues and it's better to just disable it. I disable EFI boot on my main laptop and it is much more stable during boot.

I would love to learn the procedure for moving the EFI boot partition and /boot to a different drive without everything Uberborking
