Normally if xserver-xorg-video-intel is installed it gets used automatically. The only way to remove the default modesetting driver is to remove the X11 server package, so not an option. For most Intel GPUs, xserver-xorg-video-intel is not the optimal driver, but only testing by trying both can confirm. With it installed, a config snippet can be used in /etc/X11/xorg.conf.d/ to specify which driver to use instead of relying on installing or removing xserver-xorg-video-intel.
With the newest Intel GPUs, you may be in need of the Xe kernel module instead of the i915 default that most installed iGPUs need. Which Intel CPU/GPU do you have?
