I don't see the point of having stable and old stable when using testing/unstable. Packages could easily be broken and libs mixed. As far as security, for unstable it comes from the package maintainers and not the security team. Mixing testing and unstable can be done if your diligent when installing/upgrading. Otherwise, mixing and match could be problematic.
