If you've been around the block once or twice, you've probably heard of multi-boot. It's a viable strategy to have your main installation on Stable and another on Testing. Just make sure Stable controls Grub.
Indeed, I wouldn't even enable os-prober. Rather, add Testing to Grub with a custom.cfg file (details available on request). Or use rEFInd.
