The most efficient way to transfer large amounts of data is by using rsync. You can get a progress indication by using the right options. There is a replacement for both cp and mv that will display a progress bar for both the current file and the complete process, but I'm having trouble finding that link right now. I'll try to find time to locate it and post it here later.
