I suspect the ntfs partitions on sda are the drive that hasn't been changed over yet, and used for copying the files to the nvme* partitions after they were converted. The OP probably doesn't want to be in a hurry to jump into the ocean until he's certain he can access his data on the nvme drive.

My preference is to label drives and use that label for mounting via /etc/fstab. It's cleaner and easier to remember. Either gparted or a command-line tool can be used for labeling drives and/or partitions. It's not a requirement, just my preference.
