You can allow volume to go over 100% by running the following command in a terminal.

Code:

gsettings set org.gnome.desktop.sound allow-volume-above-100-percent true
You can set the system volume in Settings over 100% this way. Then I assume your shortcut keys will work.

To reset it use

gsettings reset org.gnome.desktop.sound allow-volume-above-100-percent
