Raid 1 is mirroring. In the rare event that one of your SSD's fails, you have a perfect copy. (At the expense of cutting your combined storage in half. Your 2TB just became 1TB). Raid 0 is striping, similar to what I talked about with putting /root and /home on different drives because they both can read/write at the same time. Potentially doubling speed (although it doesn't quite work out like that in reality) and this is at the expense of no longer having 2 seperate drives, it becomes one 2TB drive as far as your computer is concerned. Depending on your specific needs, and assuming your hardware is capable of RAID, options to consider.
