Assuming you used software (md)RAID, any other GNU/Linux distribution or livecd that includes the mdraid modules and mdadm utility will be able to assemble and mount the array.how would I be able to read the raid1 disks?
RAID1 is a special case in that aside from a small header the member block devices are quite ordinary, and if needed one can just mount them individually like any other partition / filesystem... Not something to be done unless needed though, as it will desync the array.
