Do you still have PulseAudio installed? It can conflict with Pipewire. pipewire-pulse should have uninstalled PulseAudio. Not sure why it is still showing up as a server.

Could you post output of the following please?
Reference to a digital microphone (dmix), so you might need to select digital input and analogue output in pavucontrol. System might be trying to use SOF for the digital microphone. dmesg will clarify.
