I was/am hoping there's a simpler solution, but this sounds doable/feasible. Definitely a good learning opportunity. Years ago, I lost a Ubuntu server during an apt upgrade that, IIRC, rendered the server unbootable due to a botched automated upgrade from grub to grub2. Knowing how to recover from an upgrade that renders a server unbootable would let me clench my desk less tightly every time I upgrade a server.
